The Holidays Have Arrived!

The holiday season conjures many images of festive dress and warm gatherings. It reminds us of the hearty spirit of the North. Gathering the last of the field crops in waning daylight, foraging forest duff for mycological treasures and the beginning of the hunt.

It's the season where sustenance is celebrated, often by a mesmerizing fire with the smell of smoke seasoning frosty air.

And, while most of the farm is put to bed, we find ourselves clinging to freshness through cold, hearty crops and forced greens. We also revisit past seasons through the many ferments, pickles and dried ingredients we stored away. Then, there are ingredients that reach their prime in this season - the native truffle, winter mushroom varieties, frost-sweetened root vegetables and shellfish pulled from icy waters.

The table is set and the Dickens Carolers await to serenade you in song. We look forward to celebrating the annual tradition of ushering in a new year and the hope it brings.
